String Beans Almandine
2- 12 oz bags of “steam in bag” frozen Whole Green Beans (1 1/2 lbs.) OR you can also use 1 1/2 lbs. of fresh whole green beans
1/3 cup sliced almonds
1 to 2 tablespoons of olive oil
1 to 2 cloves of minced garlic- to taste (can be omitted)
Salt to taste
Toast the sliced almonds in a dry fry pan for about 3 minutes over medium heat. Be careful… stir constantly as they will toast quickly and burn!!! When toasted remove immediately and pour the toasted almonds into a plate to stop the cooking. Set aside.
Steam the green beans in the bag according to the package directions. Set aside.
Put the olive oil and minced garlic (if using) in a large fry pan and cook just a minute to bring out the fragrance…do not brown as it will taste bitter.
Empty the 2 bags of steamed green beans into the fry pan and cook for about 5 minutes. Season with salt to taste. Then add the toasted sliced almonds and enjoy!!!
Serves about 6 to 8…OR just Dena and me because they are our favorite!!!!
