Dena’s Forgotten Hard Boiled Eggs


12 Large Eggs – Hard Boiled

1/2 Cup Mayonnaise

2 Teaspoon Yellow Mustard

3 Tablespoons Sweet Pickle Relish – Can omit or use less if you don’t like them sweet.

Salt and Pepper to Taste

Paprika for Garnish



Directions to make hard boil eggs:

Put water in a pan and put the 12 eggs in a single layer.   Cover with at least 1” of water above the eggs.   Bring to a boil.  (I put a timer on for about 20 minutes.)  When boiling begins cover the pan and turn off the heat….let the eggs set in the water for 15 minutes. 

While the eggs are sitting in the hot water fill a large bowl half way with ice cubes and water and let set until timer rings.  When time is up take eggs out of hot water with a slotted spoon and put in ice bath…cover with more ice and let sit for 3 to 5 minutes. Then peel. 

After peeling the 12 hard boiled eggs cut them in half.  Remove yolks, put them in medium size bowl and mash with a fork.  Put the egg whites on a separate dish.

Directions to make the filling for the hard boiled eggs:

To the mashed up eggs yolks add the mayonnaise, yellow mustard, sweet pickle relish and salt and pepper to taste.

Spoon the yolk mixture into the egg whites on the dish.  Or you can “pipe” the yolk mixture into the egg whites using a zip lock bag that has the corner cut out.  After all egg whites are filled sprinkle with paprika. Keep refrigerated until ready to serve.


Can cut in half:

6 eggs

1/4 Cup Mayonnaise

1 Teaspoon Yellow Mustard

1 1/2 Tablespoon of Sweet Relish
